Passion Fruit Pudding with Passion Fruit and white Chocolate Sauce

I have a passion fruit tree in my backyard and it pours passion fruit on the ground every day this time of the year. I have given passion fruit to many people I know and to school staff but it is still raining passion fruit in my backyard so I decided to make a dessert with passion fruit and chocolate. Believe me it is a combination made in heaven. It turned out to be light and delicious. Not too rich but still a mouth-watering dessert.
 

Makes: 4 to 6 ramekins depending on the size

Pudding:

2/3 cup cornflour

3 cups full cream milk

1/3 cup sugar

100g white chocolate

7 passion fruits

Sauce:

250 ml of thickening cream

100 g of white chocolate

6 passion fruits

Pudding steps:

Put 1 cup of milk in a sauce pan, add the cornflour and in very low heat stir it until simmer. Add the other 2 cups of milk and stir until it starts to boil. Let it simmer for about 5 minutes. Cut 5 passion fruits in half, scoop out the seeds and blend it in a blender for 1 minute only. Put the blended passionfruit through a sieve, that way separating the seeds from the passionfruit juice, stir passionfruit, sugar and 100 g of white chocolate in a bowl.

Prepare the ramekins by placing plastic wrap covering the inside of each one. Try to make it as smooth as possible. Pour the mixture in the ramekins and put them in the fridge for about 2 hours or until set.

Take the puddings out of the ramekins. Put a small dessert plate on top of ramekin and turn it upside down. Remove the plastic wrap from pudding.

Sauce:

Put cream in a microwave safe dish and warm it up for 1 minute. Add 100 g of chocolate chopped in small pieces and heat it up for another minute. Mix cream and white chocolate until chocolate has melted and sauce is smooth. Blend 5 passion fruits in a blender and press through a sieve to eliminate seeds. Add blended passionfruit to white cream. Cut the last passionfruit and add the seeds to the mixture. Pour sauce over pudding and serve.
 
Because passion fruit is a fruit native to Brazil I will write it in Portuguese - Bom Apetite!
