White Chocolate and Strawberry Cheat Birthday Cake




It’s birthday time! It was my husband’s birthday and I had no time to prepare a cake. First I panicked, second I took a deep breath and third I thought, I am going to cheat. Hold on a second, I am talking about the cake. I bought two white chocolate mud cakes and the rest is history. Cheat White Chocolate and Strawberry Cake

Ingredients:

2 white chocolate mud cakes ready

220 g white chocolate

600 ml cream

Vanilla bean extract with seeds

2 boxes of strawberries

Fairy sprinkles

50 chocolate flavoured wafer sticks

Ribbon 

Method:
Melt white chocolate in a double boiler. Wash and cut strawberries stems. Dip strawberries in white chocolate, place them on a plate covered with baking paper, allow them to cool down. Roll chocolate dipped strawberries in fairy sprinkles, place strawberries back on tray with baking paper. Put aside remaining melted white chocolate. Meanwhile, whip 300 g of cream, a splash of vanilla bean extract with seeds and a teaspoon of sugar. Slice strawberries without the stems, spread whipped cream on top of first cake, place sliced strawberries on top and cover with more cream. Put second white chocolate mud cake on top. Add 150 g of cream to remaining melted white chocolate, and in low heat mix cream and white chocolate until thickens a little. Take out of heat and add the remaining cream to the ganache and beat it until thickens. Do not over beat it or it will split. Put over the cake until it covers the top completely and also spread it around both cakes covering the side. Put chocolate flavoured wafer sticks around the cake and secure with a nice ribbon. Put white chocolate cream on top of cake and chocolate dipped strawberries and also some strawberries without chocolate.

This is a rich, delicious white chocolate and strawberry cake, easy, fast and impressive.
