Passion Fruit Pudding with Passion Fruit and white Chocolate Sauce

I have a passion fruit tree in my backyard and it pours passion fruit on the ground every day this time of the year. I have given passion fruit to many people I know and to school staff but it is still raining passion fruit in my backyard so I decided to make a dessert with passion fruit and chocolate. Believe me it is a combination made in heaven. It turned out to be light and delicious. Not too rich but still a mouth-watering dessert.
 

Makes: 4 to 6 ramekins depending on the size

Pudding:

2/3 cup cornflour

3 cups full cream milk

1/3 cup sugar

100g white chocolate

7 passion fruits

Sauce:

250 ml of thickening cream

100 g of white chocolate

6 passion fruits

Pudding steps:

Put 1 cup of milk in a sauce pan, add the cornflour and in very low heat stir it until simmer. Add the other 2 cups of milk and stir until it starts to boil. Let it simmer for about 5 minutes. Cut 5 passion fruits in half, scoop out the seeds and blend it in a blender for 1 minute only. Put the blended passionfruit through a sieve, that way separating the seeds from the passionfruit juice, stir passionfruit, sugar and 100 g of white chocolate in a bowl.

Prepare the ramekins by placing plastic wrap covering the inside of each one. Try to make it as smooth as possible. Pour the mixture in the ramekins and put them in the fridge for about 2 hours or until set.

Take the puddings out of the ramekins. Put a small dessert plate on top of ramekin and turn it upside down. Remove the plastic wrap from pudding.

Sauce:

Put cream in a microwave safe dish and warm it up for 1 minute. Add 100 g of chocolate chopped in small pieces and heat it up for another minute. Mix cream and white chocolate until chocolate has melted and sauce is smooth. Blend 5 passion fruits in a blender and press through a sieve to eliminate seeds. Add blended passionfruit to white cream. Cut the last passionfruit and add the seeds to the mixture. Pour sauce over pudding and serve.
 
Because passion fruit is a fruit native to Brazil I will write it in Portuguese - Bom Apetite!

Easy Choc Chip Chocolate Cake

Easy Choc Chip Chocolate Cake 

This is a super easy and super deliciously fluffy chocolate cake recipe and as always I am using the Super Food Organic Raw Cacao.
 

Ingredients:

2 cups of self-raising flour

1 ½ cups of sugar

½ cup of Organic Raw Cacao

1 pinch of salt

½ cup of butter

1 ¼ cups of milk

2 eggs

1 ½ cups of semi-sweet choc chips

Cocoa powder to dust
 

Preparation:

Pre-heat the oven to 180°C or 160°C fan forced. Put the first 7 ingredients in a bowl and mix it. I use electric mixer, but can be hand mixed as well. Once it is mixed and you have a fluffy light texture you can add 1 cup of choc chip and mix it with a spoon. Pour mixture in a 30x7cm greased rectangular cake pan lined with baking paper. Put in the oven for about 45 min. Before taking cake out of the oven use a fork or a stick and place it through the highest point of the cake, if stick comes out clear it is ready. Turn off the oven, allow cake to cool down for at least 10 minutes before taking cake out of oven. Place cake on a tray or a plate, dust with cocoa powder and sprinkled the remaining semi-sweet choc chips over the cake.

Tip: Try it warm. Great for morning or afternoon teas.

Double Chocolate Pudding
 
This is a recipe that will make your taste buds very happy. It is luscious, scrumptious, semi-dark and gluten free. Enjoy!
 
Ingredients
1 can of skim condensed milk (400 g)
1can of light and creamy evaporated milk (375 ml)
3 eggs
1/2 cup of Organic Raw Cacao
1 Tbs of butter
1 bar of white chocolate (200g)
 
Put all the ingredients in a blender. Blend it until you get a smooth consistency. Put it in a small to medium round glass container and place it in the microwave between 8 to 10 minutes depending on your microwave. Wait until it is cool. While it is cooling you can melt the white chocolate in the microwave, mixing every 10 seconds for about 1 minute.  Put flan on a plate when it is cool, drizzle with melted white chocolate, put it in the fridge and wait until it is cold if you can. Cut in slices and serve. Enjoy!

Delicious Chocolate Popcorn Nuts and Meringues recipe

Hi everyone, great news! Chocolate House will from now on release some great chocolate recipes for you to try at home.

Our first recipe is a delicious treat that everyone will enjoy! I do not know anyone who do not like popcorn and the majority of us LOVE chocolate; add meringue to it and you have a piece of paradise on the plate. The nuts are there to balance, give texture and extra taste.

So here we go…

Ingredients:

200 grams of good quality dark chocolate bar

1 popcorn microwave packet

Cashew nuts

Meringue  

Directions:

First put the popcorn in the microwave, please follow direction on the pack. Take popcorn out of the microwave wearing a pair of oven mitts as it will get really hot. Put aside until it cools down a little. While waiting for the popcorn to cool down break the chocolate bar in small pieces and put in a bowl.
Melt chocolate in the microwave for one minute STIR EVERY 20 SECONDS. Popcorn should be ready now. For every 200 g of chocolate you will need about 30g of popcorn, so for this recipe you will only need 30g. Put popcorn in a plastic container, put half of the melted chocolate over popcorn, add the nuts and meringue (I used a handful of cashew nuts and small meringues) please use as much as you like. Top it up with remaining melted chocolate.

Put it in the fridge until chocolate sets and Voila! It is ready. Enjoy!
